Coffee in Paris | The Second Generation
It is no secret how much we love coffee over at the SFP offices. Since our round up of some of Paris’ first coffee spots, we have welcomed newcomers like The Broken Arm, Loustic, and most recently, Holybelly that just opened earlier this fall. As the weather cools, and we head into winter, we thought we would share what we view as Paris’ Second-Generation coffee spots.
This small and cosy space is the brainchild of Australian Chris Nielsen who has created a friendly and welcoming new addition to the coffee scene in Paris. The interior is sleek and modern with a concrete bar, a back wall covered entirely in steel and beautiful triangular wooden stools and tables designed by his architect wife, Emelie.
Chris’ coffee is prepared with the Kees van der Westen Spirit coffee machine. This very futuristic-looking machine is the first of its kind in Paris and is bringing coffee preparation to a whole new level. Since our beloved Black Market Cafe closed up shop this past summer, we have been awaiting the future opening of Fragments. Youssef Louanjli has revealed that Black Market was more of a trial run and his newly opened (and still not complete) Fragments is what Youssef has considered his “real project.”
This bare-bones space is open 7 days a week and still evolving. The space is open to come in and have an expertly made, freshly brewed filtered coffee from the water reverse osmosis system or espresso-based coffee made from the Kees van der Westen Mirage machine and ground with the Mahlkönig EK43 grinder.
With each cup of coffee served, the two explain not only the process but the origins of the beans. Every detail has been given extreme attention at Fragments. They will be serving some goodies from Emperor Norton but also will have a full kitchen with in-house breakfast and lunch service. This new space was opened primarily as a coffee roasting and barista training from the team behind Telescope Coffee. Located in Belleville, the space is split between a production space and a boutique and training space. Trainings and tastings will take up the Belleville Brûlerie throughout the week and they will open to the public for a solid cup of freshly roasted and brewed coffee on the weekends.
Their goal is to share great coffee with people and train people on how to make a great cup of coffee in the comfort of their own homes. There is a big focus on filtered coffee at the Brûlerie which is still a relatively new concept in Paris where the vast majority of coffee drinks are espresso-based.
There will be a rotating selection of machines and equipment that will be used for training and they will be roasting with the Dutch manufactured Giesen W15. Their coffees will be originating from Kenya to Honduras, and will be sourced with the help of Collaborative Coffee Source.Belleville Brûlerie 10 rue Pradier, 75019
