Autumn Recipe | Gougères
As Autumn is approaching and it’s getting more chilly outside, it’s time to start weening yourself off of those outdoor picnics, and start getting back into the kitchen! We know we have to ease ourselves in slowly so to start off we want to share one our of favourite recipes with you – Gougères.
For those of you who have not tasted these little French delights yet then please allow us to introduce you to them. To put it plain and simple, they are cheese balls, delicious choux pastry, cheese filled balls.Different cheeses can be used depending on your preference but the more common cheeses are Comté, Gruyère or Emmental. They originally came from Burgundy and were invented in the 17th century in a famous little patisserie called “Le ramequin de Bourgogne”. Traditionally they are often served cold as an aperitif when wine tasting. We personally prefer them served hot, straight out of the oven, so that the cheese is still melted served with a glass of red, or if you’re feeling fancy, a glass of champagne!
Try out our simple and easy recipe below for when you next host an apéritif and impress your friends with these delicious golden gougères!
115 grams unsalted butter, cut into cubes
1/2 cup water
1/2 cup milk
1 cup all-purpose flour
4 large eggs
100 grams of grated Gruyère cheese (can be substituted for Emmental or Comté)
Extra grated cheese for sprinkling (optional)
Large pinch of salt
1 egg yolk for glazing (optional)
Preheat the oven to 180 C.
Combine water, milk and salt in a saucepan and bring to a boil. Add the flour and stir quickly with a wooden spoon until a smooth dough forms. Then take off the head immediately.
Add the eggs one by one and beat into the dough, stirring continuously.
Add the cheese, salt, pepper and nutmeg and stir into a good batter.
Line baking tray with baking sheets.
Transfer dough into a pastry bag with a standard tip and squeeze 1 inch ball mounds on the baking sheets 2cm apart from each other.
Glaze tops with egg yolk and sprinkle with cheese.
Bake for approximately 22-25 mins or until golden.
